Farm-to-table dining

PlannedArtist's impression

From the land to the table.

A planned open-air restaurant where the menu begins in the farm’s own gardens, orchard and pond — and in the flavours of Northern Sri Lanka.

Fresh & seasonal

A kitchen that starts in the field.

The idea is simple: cook what the farm grows, when it grows it.

Vegetables from the raised beds, herbs and spices from the garden, fruit from the orchard, eggs from the poultry house — the menu is planned to change with the seasons and with what the farm and its neighbours produce.

What the estate cannot grow, we intend to source from farmers nearby, building on the relationships we hope to create through Farmer Connect.

Northern Sri Lankan flavours

A celebration of the cooking of the North.

We hope to celebrate the food of Northern Sri Lanka — generous rice and curry, fragrant spice blends, fresh sambols, and the vegetables and herbs of the season — alongside familiar dishes for younger and international guests.

Traditional methods such as clay-pot and wood-fire cooking are part of our thinking. Recipes and menus will be developed with local cooks.

The pavilion

Open-air dining beneath a thatched roof.

A relaxed, generous space designed around the gardens, the breeze and long shared tables.

Thatched pavilion

A broad, overhanging roof on timber posts, open to the gardens.

Family dining

Long tables and a relaxed atmosphere for families and groups.

Garden terrace

Outdoor seating for breakfasts and evenings.

Guests and visitors

Planned to welcome estate guests and, in future, day visitors.

The concept plan describes a restaurant of around 80–100 seats. Menus, prices and opening hours have not been set.
